About Chateau Cajus and organic * wines...
Chateau Cajus vintage is situated halfway between Bordeaux and Libourne, at the beginning of the Entre-Deux-Mers, near wines of Saint-Emilion.
The building, simple, dates the XVIIth century. It welcomed the pilgrims on the road of Santiago de Compostela and also welcomes maintaining the amateurs of wines for visits and tastings.
The vineyards of Chateau Cajus are in organic farming since 1998 and we convert into wine our wines according to the traditional method, by respecting the charter of the FNIVAB.
We take into account the lunar cycle, as well for the work of the vine as in phase of wine making and breeding of the wine.
We produce organic wines of 3 colors : red, thin and white dry, as well as some organic grape juice.
The soil being argilo-calcareous, our vines are :
- Red and light red Bordeaux : 50 % Merlot, 25 % Cabernet Sauvignon and 25 % Frank Cabernet.
- Dry white Bordeaux : 50 % Sémillon, 50 % Sauvignon.
Our wine exploitation has 3 wine storehouses :
- a wine storehouse with thermoregulated wine making vats,
- a wine storehouse for the wine in phase of breeding in barrels (*),
- a wine storehouse to store the bottled wine and pursue its ageing before letting you taste it.
(*) These barrels are in French oak, their renewal is made over 3 years (that is on average every year : 1/3 of new barrels, 1/3 of one year and 1/3 of the barrels of 2 years). This allows us to bring a structure more elaborated in certain Vintages while respecting the aroma of the fruit.
